The signature foods for northern China's Inner Mongolia Autonomous Region are dairy products and lamb meat, providing the energy locals need to battle the cold weather, and paints a pastoral lifestyle that still exists in this region today. 

The cover photo shows one of the most famous dishes in the region, and is popular across the country as well -- the Roast Lamb. It is specially prepared when a dinner party is held in honor of distinguished guests or when there's a celebration. 

Below is another popular dish -- the Inner Mongolia Lamb Sausage. The mixed stuffing of onions, ginger, pepper, salt, and fried flour is coated with thoroughly cleaned lamb intestine. Tie the two ends of the sausage to seal it, then boil the sausage in water till it's cooked. Finally, cut them into cubes of about 3 centimeters, and the dish is ready.
