Raw wheat is usually ground into flour. In European and American countries, flour is often used to bake bread and pastry, while in China, the flour's main form is noodles, dumplings and baozi (a filled bun). Henan people excel at making a variety of flour-based food. Be sure to try them if you come to Henan!
