Exclusive Interview with Michelin-starred chef Rolf Fliegauf

Boasting 128 Michelin-starred restaurants in 2019, Switzerland is famed for its high-quality ingredients, innovative dishes and desirable dining experiences. 

To coincide with the recent launch of the Michelin Guide Beijing edition, internationally-renowned chef Rolf Fliegauf has sailed east to join Beijing's vibrant gastronomic scene. CGTN's Louisa Lee had the chance to get up close and personal with the culinary master.

Chef Rolf Fliegauf and his Switzerland team are adding a heavy dose of excitement to the Beijing's culinary industry by presenting traditional Swiss dishes with modern flair. 

The 39-year-old chef, was regarded as the youngest Michelin starred chef in Europe when he won two at age 29.

His creative dishes include an innovative interpretation of a typical local breakfast called, "bircher muesli," and a dessert named "Swiss Mountain Meadow," that's inspired by the stunning natural landscape of Switzerland.

While Fliegauf's visit to the capital was brief, the award-winning chef said that Beijing food has left him with a great impression, especially the symbolic Peking Duck. He also says that he will remember the flavors of Chinese cuisine, which may one day be an inspiration to his culinary creations.
