Zaopocu, which literally means vinasse with vinegar, is a popular specialty that originated from Puqian Town, Wenchang City, south China's Hainan Province. The soup is made by boiling vinasse with deep-fried garlic, indigenous chili sauce and some oil. The soup is enjoyed with other ingredients such as seaweed, kelp filaments, beef offal and seafood. Sour, spicy and appetizing, it also has the aroma of rice wine that lingers in your mouth.
