Qishan saozi mian (Qishan-style noodles with minced meat) has a long history. The dish, which originated in as early as the Zhou Dynasty (1046 BC–256 BC), includes noodles accompanied by pork broth plus different ingredients, such as tofu, carrots, Chinese chives or garlic sprouts. It is sour and hot, leaving a delicious aftertaste, and is well known for its "thin, pliable, smooth, sour, spicy, scented, hot, watery and greasy" features.
