Niu Bie Tang, or Cow Cud Soup, is a delicacy made by the Dong ethnic group in the southeast of China's Guizhou Province. It is made from partially digested food found in a cow's rumen, the largest chamber in a cow's stomach. Before slaughtering the animal and extracting the ingredients, cattle are fed fine grass and herbs. Other ingredients are added to the cud and bile and boiled to make a soup. People in Guizhou enjoy the soup as the base of noodle dishes.
