China is the biggest tea producer and consumer in the world. While most harvests come from sprawling commercial farms, some cultivators are bringing tea plantation back to its original form – letting individual trees grow in the midst of wild forests. Taimu Mountain in northeast Fujian Province is known for growing white tea in such an old-fashioned and artisanal way. Some of the trees are centuries old, soaking up the mineral-rich soil on the granite mountain peaks, and acuminating the flavors from the fruits and flowers that surround them. Here, the highest grade of white tea is produced by plucking buds before they open, withering them under the sun to allow the natural moisture to evaporate, therefore retaining the fragrance and freshness.
