Chinese tea is normally available in green, black, Oolong and several other varieties. But a new and extremely popular variety has been gaining ground – bubble tea. It's rich in color, full of fruity ingredients, sweet and usually sold in nicely decorated shops intended to whet the appetites of customers. The market has been growing so fast that it's gotten the attention of the Chinese government, which has formally recognized bubble tea baristas as a new profession.
