This year's harvest season for China's highly sought-after freshwater hairy crabs has recently begun in Gaoyou City, east China's Jiangsu Province.
Farmers are busy collecting crabs from standardized breeding areas, binding, packaging, and transporting freshly captured crustaceans to meet the surging demand of Chinese people.
The crabs this year are of fairly good quality, according to local farmers, who attribute it to the excellent crab species and the improved water quality of Gaoyou Lake, part of the Huaihe River Basin, where the crabs live.
