Chef Dave J Critchley used to see himself pursuing a career in art, but when he became a chef, he never looked back. He described the past 25 years since leaving university as incredible, during which he started to learn Chinese cuisine and Chinese culture. Dave's dream for the future is to become the world's first non-Chinese Chinese Master Chef, and he is now planning a food tour around China, to learn and to experience.
