Not everyone gets to follow their initial employment dream, but it doesn't always end badly. Young Dave Critchley used to see art as his career, but ended up becoming a chef. He said it was quite easy for him to drop back into kitchens and go full-time as a chef. Now, his Lu Ban Restaurant in Liverpool has become a standard of quality, and he is dreaming of become a Master Chef in Chinese cuisine.
