Freshwater fish, when they move into brackish water, gain collagen and lose fat. This is what happens to the mullet used in the popular Chinese dish, Squirrel Mullet. Before it's fried, the fish is cut in a unique way so the flesh opens up while boiling in the hot oil, rather like a flower.
