Xinjiang dapanji, or "big plate chicken," is a traditional Chinese dish from the Xinjiang region of China. It has chicken as its main ingredient and includes vegetables such as potatoes, carrots, and green peppers stir-fried with broad noodles, creating a rich and flavorful dish with a spicy taste.

Charcoal fire is often used to cook the ingredients of the dish to ensure the even cooking temperature and texture of the ingredients. Dapanji that has a bright color, strong aroma, crispy and tender texture is a well-known traditional dish of Xinjiang.
