Crammed with vegetables, sausage, or other kinds of meat, jianbing can be bought at many street corners and subway exits in cities throughout China. Made with flour and eggs on a smooth, round iron slab, the famous Chinese crepe can trace its roots back to the Three Kingdoms period (220-280) when legend has it that army official Zhuge Liang ordered soldiers to use their shields as cooking surfaces after they lost their woks. Leftover scraps of food were tossed into the crepes, providing an easy-to-hold meal for hungry soldiers. Thousands of years later, jianbing still fills the stomachs of busy office workers thanks to their rich variety of fillings.
