Cantonese cuisine has been an evolving classic, influenced by Guangzhou's status as China's main international trade port in the early 18th century. But certain flavors are on the brink of disappearing, as time- and labor-consuming techniques are replaced by machines and factory-produced pre-cooked meals. At one of China's first five-star hotels, chefs are determined to teach the traditional methods of cooking.
