Depending on how it's processed, tea is classified into six major types, namely green, yellow, white, black, oolong and dark. Wuyi rock tea, as a special oolong variety, sits between green "non-fermented tea" and black "fully-fermented tea." The processing involves more than ten steps, from the harvesting and withering, to twisting and drying.
