Malaysia's three layer milk tea, which is made with palm sugar syrup, evaporated milk and black tea, gets its name because it's layered when ingredients are poured into the glass in turn. The special aroma of this milk tea is derived from the lowest layer of palm sugar, which is extracted from nipa palm fruits. Many shops now replace it with brown sugar, caramel or coconut sugar.
