Xi'an in northwest China's Shaanxi Province is a destination that food-lovers simply can't afford to miss. To walk through its streets is to be tempted by a wave of enticing aromas of dishes such as gourd chicken and yangrou paomo – shredded pita bread soaked in mutton soup. There's also the famous roujiamo, often likened to a Western hamburger but with a much longer history. Of particular interest is the hot sauce called youpolazi – chili powder doused in boiling oil – which is used to season many dishes here.
