'Jian Cha': A way of making tea in the Tang Dynasty

Drinking tea in China is not only a means of quenching thirst, but also an art and part of the culture. Check out this unique cultural symbol of the Tang Dynasty (618-907): Jian Cha. The Jian Cha method was one of the most popular styles among Chinese tea arts originating from ancient times reaching its peak popularity during the late Tang Dynasty.

Jian Cha mainly uses compressed tea cakes that are roasted then ground to powder after cooling down. Ground tea leaves are then sprinkled into boiling water together with salt, and the third boil brings out its aroma before serving it hot.
