Have you ever tried Guanyin tofu? Indeed, it is called tofu (or bean curd), whereas it merely contains premna microphylla leaves and plant ashes, without any grain of soybean. The Chinese delicacy results in a vibrant greenish jelly which almost dances when one picks the jelly up with chopsticks. The cooking process is organically simple yet surprisingly unique. Such "tofu" can be served sweet or salty and enjoys a lot of healthful benefits. Guanyin tofu is much-loved by the residents of Lixi Ancient Village in Anhui Province, and attracts foodies across China.
