As a time-honored tradition, sausage is a must-eat delicacy for Chinese people during Chinese New Year, especially in south China. People flock to buy or prepare sausages at home ahead of this major festival. Marinated meat, air-cured pork intestines and air-curing methods: each process requires delicate treatment. Sausages are traditionally flavored with spicy and sweet flavors. They can be cooked in a variety of ways – boiled in a pot of rice, stir-fried with vegetables or boiled in soup.
