Today, we usher in the first solar term of the traditional Chinese calendar, known as "Lichun." The term Lichun that literally translates as the "Start of Spring" signifies a new beginning, where spring represents warmth and growth. With the arrival of this solar term, the daylight hours gradually begin to lengthen.

As an old Chinese saying goes: "Make your whole year's plan in the spring and the whole day's plan in the morning," highlighting the significance of the "Start of Spring." Lichun holds a special place in Chinese tradition, and numerous rituals and celebrations are observed to mark this important day.

In Chinese folklore, there is a customary practice known as "biting spring" on the first day of Lichun. People celebrate by eating chunbing or "spring pancakes," which is considered an auspicious blessing for the "strategic importance of spring in the annual plan."

In traditional Chinese medicine (TCM), it is asserted that spring is an opportune time to nourish the liver. So, rather than opting for spicy and dehydrating dishes, it is advisable to choose light dishes and fresh fruit and vegetables. Lily bulbs, yams, Chinese wolfberries, and lotus seeds are considered excellent choices at this time of the year.

Some newly sprouted vegetables, including bean sprouts and fresh chives, can serve as nutritious alternatives comparable to health tonics. Packed with protein and vitamins, they are not only fresh but also delicious in early spring. These ingredients play an important role as fillings for "chunbing" or "chunjuan" (spring pancakes), special dishes created for Lichun that feature a variety of diced vegetables.

During Lichun, aromatic tea stands out as the ideal beverage. In accordance with Chinese medicine, it has the potential to expel lingering coldness and impart warmth to the human body.
