Tea customs have a long history in Anxi County, southeast China's Fujian Province. For tea farmers, the most anticipated event each year is the Doucha or tea competition. To brew a cup of Tieguanyin that is both flavorful and visually appealing, there are strict requirements for the number of tea leaves, water temperature and brewing time. The interaction between people and tea conveys the tea ceremony spirit of purity, etiquette and harmony.
