Jiucengpi: A taste of the four seasons in one bite

Jiucengpi is a popular rice cake made in Ganzhou, east China's Jiangxi Province. To make this snack, rice is ground into rice milk, mixed with natural pigments extracted from fruits or plants and steamed nine times. It is then colored green, red, yellow and white, representing the four seasons of the year.
