Exploring the enchantment of Huaiyang cuisine

03:19

Sustainable Gastronomy Day is observed every year on June 18. Launched by the United Nations, this special day is dedicated to sustainable cuisine that promotes food security, agricultural development, nutrition and the conservation of biodiversity.

As one of the four major Chinese cuisines, Huaiyang cuisine from east China's Jiangsu Province is characterized by its sustainable culinary tradition which transforms seasonal local ingredients into edible art. Huaiyang culinary culture respects the original flavor of the ingredients, reduces the use of seasoning and opposes food waste.
