Sichuan Province is famed for its flavorful cuisine, and there's probably no better way to start your culinary exploration than in the provincial capital, Chengdu. It has a strong "xiao chi" or "small eats" culture, where the goal of eating is not to get full, but to tantalize the taste buds. Just like with tapas, you might order several snacks at once, and you can almost be sure they'll be drizzled in aromatic chili oil, chili flakes and, of course, the famously numbing Sichuan peppercorns!
