How can we define the delicacies of Gansu, the northwestern Chinese province boasting a long and glorious history?

Months ago, malatang from Gansu's Tianshui – a mixture of boiled meat and vegetables seasoned with a unique and "soul-stirring" chili oil – tantalized the taste buds of foodies all over China.

But there's much more to the delicacies of this province, which lies at a key point on the ancient Silk Road. The province is famous for its fresh and mouthwatering mutton and a variety of cooked wheat-based foods. This "soul mate" combination manifests itself in many amazing ways.
