Peruvian ceviche is one of the country's signature dishes and a must-try for anyone interested in the local cuisine. It is recognized by the UNESCO as an expression of Peruvian traditional cuisine and the country's intangible cultural heritage. This citrus-infused seafood dish features raw fish, citrus juice and various seasonings, where the meat is usually marinated together with sliced or chopped onion and served with chopped cilantro. Locals love showing off this iconic dish to wow visitors' taste buds.  

In China, there are also some special methods used to make delicious fish dishes. Some require pieces of marinated fish which are dried in the sun before cooking as the main raw ingredient. In some port cities, salted fish can often be seen hanging out to dry in the sun – a sight unique to certain coastal areas.
