CHIFA is the phonetic translation of the Chinese word for "dinner," and it serves as the unique signboard for Peruvian Chinese restaurants. Walking through the streets of Lima, Peru's capital, you'll see "CHIFA" signs everywhere. Entering a restaurant, you'll notice that the menu is almost entirely composed of "Chinese flavors," but from the waitstaff to the owner and chef, everyone is a native Peruvian.
