Why do foodies in China love hairy crab?

Available from late autumn to early winter, the hairy crab is a prized delicacy in east China's cuisine. Though the flesh is tender, it's the roe that truly gets the gourmet going. Some prefer the chunky egg yolk-like texture of female crab roe, while others love the sticky, buttery roe of the male crab.
