Qiaojiao beef, or foot-lift beef, is a well-known dish from Leshan, a city in southwest China's Sichuan Province. This slow-cooked beef soup, made from the internal organs of a bull, is not just a local favorite but also a recognized part of Leshan's intangible cultural heritage.
Paired with a plate of chili sauce, it's incredibly spicy and flavorful, making you reach for that extra bowl of rice.
What else does Leshan offer? Check out these photos.
BoBo chicken
Served in a large bowl, numerous bamboo skewers are packed closely together. Tender chicken pieces, crunchy vegetables, and black fungus are threaded onto these skewers and immersed in a special Sichuan spicy soup, offering a unique and delicious taste.
Linjiang shredded eel
Freshly caught eels are seared over intense heat, resulting in thick, glistening flesh with a delightful bounce. Each bite bursts with fiery spice and the pure, fresh taste of the eel.
Sweet skin duck
Sweet skin duck, a Leshan specialty, features a crackling malt sugar glaze over tender, marinated meat. The balance of sweet and savory, crisp and juicy, makes it a must-try.
