Wengshan Village in Zezhou County, Shanxi Province, is celebrating a bountiful harvest of Xiangchun. Xiangchun, commonly known as Chinese toon, refers to the tender young shoots of the Toona sinensis tree. It's a popular seasonal vegetable in China, prized for its unique, strong fragrance and slightly bitter taste. Rich in nutrients, it's often cooked with tofu or eggs, or used as a topping for noodles – dishes beloved by many.
