In Türkiye, gözleme is not just a type of pancake; it carries deep family and cultural heritage. Emine Özdemir, from Karabük, learned how to make gözleme with her mother and grandmother at the age of 15 and has been perfecting the craft for 30 years.

The pancakes from her hometown are different from those in other regions. The dough is thinner, and they often use fresh vegetables, especially spinach grown in their own garden. Emine says these details make her hometown's gözleme stand out, with the taste and freshness becoming the hallmark of this delicious dish.

Emine recalls how she learned from mistakes and, after years of practice, eventually mastered the technique. She believes that making gözleme is not just a skill; it represents the Turkish people's love for food and their commitment to preserving tradition.

To her, beyond the taste, gözleme holds a deeper significance in society. It's an integral part of daily life and carries its own story in every family.
