In Jingle County, Shanxi Province, more than 3,000 hectares of quinoa has entered harvest season. From above, the fields resemble a colorful patchwork quilt draped across the Loess Plateau. As one of China's top quinoa-producing regions, Jingle offers a cool climate, wide day-night temperature swings and abundant sunshine, which along with its high altitude and suitable soil make perfect conditions for the crop.
