Jiao Tong's Cuisine

Starting in the Qing Dynasty, large numbers of migrants came to Taiwan, mainly from Fujian, then Guangdong. Fujian was by far the largest source, and they brought with them the light, slightly sweet flavors of Fuzhou cuisine. Fuzhou food, as an important culinary tradition, is one of the Eight Great Cuisines of China. Today, you rarely see Fuzhou food on Taiwan’s streets, since it’s been fully absorbed into the island's own cuisine.
