Handmade sesame cakes bring festive flavor to Guizhou

As the Chinese New Year, or Spring Festival, approaches, the traditional handmade sesame cakes of the Tujia people have entered their peak production and sales season in Dejiang County, southwest China's Guizhou Province. Local time-honored workshops, represented by Peng Yingfa's sesame cakes, uphold the authentic handicraft skills of the Tujia people and bring the essential festival staple to people's Spring Festival tables.

The unique flavor of Peng's sesame cakes lies in the careful selection of ingredients and strict craftsmanship. They mainly contain peanuts, sesame seeds and sunflower seeds. Simple as the ingredients are, they create a rich and distinctive taste.

The process of making them starts with soaking high-quality glutinous rice for two days, to allow it to puff up before deep-frying. Selected peanuts, sesame seeds and malt sugar are slowly boiled into syrup. All the ingredients are fully mixed and coated, then placed into molds and cut into shape. The whole process takes about 40 minutes.

Peng Yingfa has been making sesame cakes for more than 40 years, sticking to traditional techniques. During the Spring Festival sales season, which lasts three months, his simply packaged products remain highly popular, keeping alive the festive flavor of the Tujia people and precious local memories.
