Before dawn breaks over Bosten Lake in the Xinjiang Uygur Autonomous Region, fishermen glide through lotus-dotted waters, hauling up traps full of plump young crabs. Tender-shelled and sweet, they're snapped up by buyers right at the dock. Years of ecological restoration have revived China's largest inland lake into a thriving aquatic hub, home to over 32 fish species and yielding over 4,000 tonnes of harvest each year.
