Learning from granny, savoring northern China's youmian rolls

In Yugouliang Village in Zhangbei County, Hebei Province, making youmian, a traditional noodle made from naked oat flour, is both a daily meal and a cherished local tradition. The process follows a technique known as "three raws, three cookings." The oat grains are first roasted and then milled into flour. The flour is mixed with boiling water to form a smooth dough, hand-rolled into small curls and finally steamed. CGTN host Julian Waghann and Mexican traveler Juan Carlos Cheang Guzman joined a local granny to learn the craft, their movements clumsy but earnest. When the steamer lid was lifted, fragrant steam filled the room. A basket of freshly steamed youmian carries the warmth of home, the wisdom of generations and the simple joy of sharing a meal together.
