Across Turpan's 42,000 hectares of vineyards, the grape harvest is underway. Premium grapes are hung in breezy brick drying rooms, where hot, dry winds transform them over 38 days – green stems turn reddish-brown by day 3, skins wrinkle by day 7, berries shrink to a chewy bite by day 15, and by day 38, perfect raisins emerge. They're then washed, sorted, sterilized and packaged before shipping nationwide, bringing Turpan's sun-sweetened flavor to tables across China.
