Sacré bleu! Vegan-friendly 'fauxmage' makes its mark in France

In France, people take their food very seriously. With veganism gaining popularity, Paris, the place where cheese comes from, is now home to the country’s first plant-based dairy stores. They make and sell vegan cheese named “fauxmage."
Jay and Joy make eight types of “fauxmage,” with cashew nuts or almond milk as a base. The grains are soaked to extract moisture before they’re blended together. The paste is allowed to ferment, before the most important step: the aging, which takes five to 15 days.
The finished products are sold in stores and on site, catering to a niche market of tourists and Parisians. “Fauxmage” may not be a staple in France but it’s certainly worth a try.
