Hong Kong is not only an international financial hub, but also a gourmet paradise, where restaurants have the perfect environment to develop and evolve within.
Hong Kong people love goose for its crispy skin and juicy, tender meat. While it's quite a regular offering in most local restaurants, if you want to get the best, you need to visit Sham Tseng village in the New Territories.
Among the establishments there, Chan Kee has been the outstanding option for decades where it sells up to 500 roasted geese per day.
From humble beginnings in the 70s as a pop-up restaurant for highway drivers and construction workers, Chan Kee is now the go-to place for goose lovers in Hong Kong and on tourists' to-do list. However past experiences have made Chan's family quite wary of risky business ventures.
“During our heyday in the 90s, we had 15 branches across Hong Kong, but the 1998 Asian Financial Crisis and the SARS outbreak in 2003 hit us hard,” said Chan.
Chan Kee turned to the Chinese mainland in the late 90s, where he found new business opportunities. He said he will keep going with renewed confidence and try to bring the flavor of Hong Kong to even more people across China.
