The hairy crab, also known as the Chinese mitten crab, is a special delicacy usually eaten in autumn. And the most prized and expensive of them all come from eastern China’s Yangcheng Lake. As this year’s harvest season approaches, crab farmers there are getting ready to cash out a whole year’s hard work.
