No trip to the county of Huili in southwest China's Sichuan Province is complete without a taste of a local specialty "yundouba", which literally translates into "iron cake".
The mold of the cakes looks just like iron, hence the name. They're made from rice that's been ground down and mixed with water to become a paste which is then fermented and later combined with eggs and brown sugar.
The cook places the batter directly into the molds, then cooks them until each cake is golden-brown and crispy on the outside, yet soft and fluffy on the inside. The fragrance of these rice cakes fills the streets of this southwestern county, permeating the humid atmosphere with the pleasant scent of toasted pastry.
