Hot pot: California chefs look at edible marijuana market ahead of legalization
[]
In California, luxury dishes infused with cannabis are becoming popular, with many chefs catering to this budding culinary trend with an overwhelming response. Come the start of 2018 when recreational marijuana use becomes legal in the state, demand is expected to explode.
Andrea Drummer is a Cordon Bleu trained chef who has worked in some of the most respected restaurants and hotels across the US. In 2012, she started Elevation VIP Cooperative, a medical marijuana culinary events company. Andrea is very specific when it comes to the ingredients she uses, and how much.
Andrea is just one of a growing number of gourmet chefs who are taking cannabis-laced edibles to a new higher place. She told CGTN’s May Lee that there's a four to five month waiting list for Elevation VIP catered events, which cost anywhere from 250 to 500 US dollars per person.
Legal experts warn of potential chaos when it comes to proper regulation under the new law. Attorney William Kroger, who specializes in marijuana cases, believes the law was haphazardly put together without proper preparation.
But for cannabis entrepreneurs like Andrea Drummer, whose cook book comes out later this year, the future is set to be lit up with a lot of deliciously elevated opportunities.
