The northeastern part of China is made up of three provinces, Liaoning, Jilin, and Heilongjiang. They share similar cooking styles and weather: Freezing in winter and cool in summer. 

People in northeastern China tend to eat meat to battle the cold. So, the cooking techniques tend to be rough and the food hearty, rather than exquisite with crafted the ingredients. Stewing is one of the more popular food preparation techniques, and stewed chicken with mushrooms is one the mainstays.

Other commonly used ingredients in northeastern culinary culture are potatoes and marinated cabbages. 

Though the three provinces have much in common, they each have at least one dish that is entirely theirs.
