'Dian Cha': The art of tea preparation in the Song Dynasty

"Dian Cha" stands as a distinctive cultural emblem of the Song Dynasty (960-1279). It bears great historical significance in the evolution of Chinese tea culture and preparation methods.

Unlike the tea brewing method of the Tang Dynasty, the Song Dynasty favored "Dian Cha." The process begins with hot water being poured over fine-powdered tea, creating a paste, then more hot water is slowly added as the tea is constantly whisked with a bamboo stick.
