A unique and fun experience you can try in Xiamen is to buy fresh seafood at the Eighth Market, one of the largest and oldest wet markets in Xiamen, and then take it to a restaurant and ask them to cook it for you. You'll pay a small fee (think of it as corkage), but they'll prepare it any way you like. We recommend doing as the locals do and getting it cooked with "soy sauce water" – literally just soy sauce and water!
